Snackification - The Dawn of Gastronomic Table Culture

With the move away from the classic three meals and the learned three-course menu towards small mini-meals and snacking moments spread throughout the day, new table concepts for classic gastronomy at atypical meal times are becoming increasingly important.

Traditional food culture in transition

Increasing digitalization is changing the rhythms of our everyday lives. Everything is becoming faster, more flexible and more mobile. There is hardly any time left for a proper breakfast. Lunch is consumed at the food truck and in the evening a bowl is eaten in a group with friends. The shift away from classic gastronomic moments to mini-meals is permanently changing the eating culture and demands new dishes that pick up on and serve these changes.

Snacks as gastronomic mini-meals

Years ago, snacks were frowned upon as unhealthy cravings killers with small sweet and salty snacks. With the change of the working day and the growing health consciousness, snacking today is dominated by vegetarian, vegan and healthy-nutritional mini-meals. Mini-meals are replacing traditional eating occasions, with bowls, vegan burgers, wraps and sushi, or even hummus and salads in demand at atypical times in the late morning or late afternoon, or even late at night, in small, snack-like sizes. Compact and healthy snacks are thus displacing the sumptuous three-course meal. 

Snacking table concepts in gastronomy

Snacking as a new way of dining is changing the gastronomy in an unprecedented way. The desire for small meals is now being served by numerous pop-up stores, food trucks and street food artists with exotic solutions. However, the strong influx requires a rethink and a change of classic table cultures and concepts in gastronomy. Longer opening hours, starting in the late morning until late at night, enable restaurants to generate additional sources of income via ever smaller, more compact dishes that are not only eaten quickly but are also healthy and tasty.

Compact gastronomy tableware as a snacking solution

Snackification places new demands on gastronomic equipment. Bowls, Asian soups, sushi, mezze or tapas are no longer served on large plates, but on many small, compact and light pieces of tableware such as bowls and small snack plates. A higher turnover rate requires easily transportable and flexibly usable tableware pieces that emphasize the enjoyment and variety of nutritious and healthy snacks.

Snacking Deluxe

Mini meals are in vogue. The upscale gastronomy has also discovered snackification for itself: Varied, small noble dishes offer contrast and excitement on the plate. Whether dipped fritters with activated charcoal and caviar, noble kiver with cream cheese, confit truffled potatoes or lobster with avocado and sesame crunch: served on differently designed porcelain plates, the snacks offer a variety of flavours and an exciting visual impression. It's all in the mix.

Kaffeeklatsch

This is how "coffee and cake" goes today: a modern interpretation of a light cream cake comes on a white, simple porcelain plate with a retro look - a charming homage to the coffee gossip of the 50s and 60s. It is accompanied by an extravagant coffee variation. But not served in a cup, but in a clear champagne flute made of crystal glass. Reminiscence of old times, staged young.

Small Servings

Small portions in a glass: these sensational snacks seem to float in the glass. The mouth-blown double-walled bowls made of borosilicate glass provide the perfect stage for the healthy and fresh creations that set colourful highlights. A scallop ceviche with green celery, veal tartare with a potato cream and a green pea shot with Parma ham and pea shoots are the main actors in this opulent performance.

Handmade

Down-to-earth and genuine: In this honest dish of Bündnerfleisch, Burattina and Crispy Trammezini, the focus is entirely on the quality of the ingredients. The bowl with its handcrafted look serves as a presentation surface for the colourful culinary ensemble. A small white porcelain caraffe is added for pouring the sauce and is accompanied by cutlery in traditional design. Handmade style without Chi-Chi!

Tapas modern

Small appetizers interpreted in a modern way: Just as the typical tapas come as a diverse combination of different dishes, they are also served here on tableware in a varied mix of materials. Dark stoneware meets serving plates made of petrified wood, black cutlery and plain glass. The yeast bun with shallot jam and the tempura-baked Fright white Fungus are thus presented in a modern and surprising way and provide something to talk about at the table.

Mix it.

These snacks of mini brioche, lobster roll and salmon are not only fresh and healthy, but are also creatively staged. Served on white porcelain or tableware with a coloured effect glaze in neutral tones, they are the eye-catcher at any buffet. The rectangular serving platters allow space-saving arrangement of different dishes on the table - and are also easily stackable in the kitchen. The cutlery and glassware in a modern and at the same time functional design can be used for a variety of purposes.
