There are no limits to BBQ. It is also becoming more and more popular in Michelin-starred gastronomy: far away from the grill and classic steak house image and without sacrificing taste and social effects.

BBQ - cooking method and social event

BBQ enthusiasts are drawn in front of the grill as early as January. For the catering industry, barbecue is becoming more and more of a focus to celebrate the good and the comfortable in the sacred gastronomic establishments. Thrill with the right cooking methods, special barbecue indoor smokers and the focus on fiery smoky flavors of meat and vegetarian dishes in an upscale ambience. So there is the coziness and gathering not only in the garden, but also in the upscale gastronomy and star cuisine.

BBQ - Celebrated aesthetics

With the BBQ trend in gastronomy, far from the rustic character of a learned BBQ or steak house, the focus is on aesthetics and the approach to the preparation. The art of finding, presenting and processing the right ingredients such as meat, seafood or tofu skewers for health-oriented connoisseurs becomes the very occasion and specialty of gastronomic cuisine. Grill food thus becomes a deliberately celebrated luxury in a class of its own with the highest quality and most refined ingredients.

BBQ - New table concepts are important

How should you position yourself as a restaurateur against the cosiness and social enjoyment of the BBQ of potential visitors? The danger of clashing with self-developed table concepts or even appearing inappropriate and artificial is great, especially with the BBQ trend. Table concepts should consciously focus on the actual dish - the meat and the ingredients - without simply copying the ambience of a steakhouse and temporarily celebrating it. The supposedly simple adaptation of such an all-encompassing trend in one's own gastronomy thus becomes the greatest challenge.

BBQ - Fine instead of rustic

To stage the BBQ trend in gastronomy means to provoke a deliberate break with the learned patterns for grilling. The positioning does not succeed via the rustic character of classic gastronomy tableware in cowboy style, but via the fineness of the tableware in order to deliberately highlight the marbling of the meat. At the BBQ, the guest is involved in the process of grilling and, with his attention, thus becomes an important protagonist in helping to shape the occasion itself. The fine restraint of the tableware has a central supporting role here, which the viewer only ever notices when he is already planning and celebrating his own BBQ event within his own four walls.

Perfect Presentation

Rustic with a surprise effect: A brown stoneware plate with a metallic glaze gives the grilled rump steak with roasted onions and green asparagus the appropriate setting. The coarse look of the glaze gives the impression that the meat is being served on the embers of the fire. This archaic presentation is underlined by the dark dip bowls and the massive steak knife.
